Happy Monday! Made this amazing breakfast for my dad and I this morning 😋 Veggie egg scramble with a side of breakfast potatoes. It’s crazy how much I love cooking for others haha. Recipe below!
VEGGIE SCRAMBLE🍳
Whisk 1 egg and 2 egg whites in a bowl and set aside. Heat a pan to medium heat on the stove and spray with coconut oil. Add a big handful of spinach and cook until it starts to wilt. Then add onion, bell pepper, and broccoli, and cook for a few minutes until softened. Push veggies to one side of the pan. Spray other half with coconut spray and then add the eggs. Season with cracked pepper and Mrs. Dash chipotle southwest. Cook eggs with veggies for another few minutes until scrambled. Add feta cheese once done, and mix everything together. Top with cilantro, green onion and cherry tomatoes.
BREAKFAST POTATOES🍟
Heat a pan to medium heat and add ½ Tbsp @earthbalance vegan butter. Once heated add diced leftover boiled potatoes. Season with cracked pepper and cook until crispy. Enjoy!Instagram - goodhealthgoodvibes
